Shoondhisa Natural - Ethiopia

We don’t carry too many naturally processed coffees, but Shoondhisa from Ture Waji and his family’s company, Sookoo, has been a staple at Tandem for years. This dry-processed lot is composed of coffee from 35 producers in the sub-kebele of Shoondhisa, most of whom grow coffee on small plots or in their gardens within fully or semi-forested systems. They deliver their cherry to the nearby Suke Station, one of several drying stations owned and operated by Ture and Sookoo across Guji. This particular lot offers a somewhat understated version of a natural Ethiopian profile, with plenty of jammy fruit and syrupy sweetness balanced by florals, subtle citrus, and milk chocolate depth.
