One of my favorite things to do with The Good Thing is a good old origin match. Our buddies at Light in the Attic reached out to gauge our interest on this one right around the time that fresh Indian coffee samples - from our buddies at Osito - were landing on our cupping table. We had to do it. And whoa glad we did - on both accounts. Get your ears and your mind ready. This record is anything but background music. When this is on, you are engaged. You are listening to it. I can't think of another album that is so vibe commanding. It's been a tough one to put on in the cafe because baristas and customers alike are fully transported into the electronic world of disco ragas. Go there.
Ratnagiri RDN2-2 - Chikmagalur, India
When we bought a washed blender coffee from Ratnagiri Estate earlier this year, we were super impressed with both the clean, structured, approachable cup profile and the consistency across the lot. For this small "vacuum shock" natural, we are excited to highlight a coffee more representative of the direction owners Ashok and Divya Patre are pushing Ratnagiri: toward innovative, sophisticated, outside the box but thoroughly scientific processing experimentation. For this lot, cherry was fermented for 48 hours with a specific microbial strain in sealed stainless steel bio-fermenters.
Following fermentation, a vacuum pump was used to create a vacuum inside the bio-fermenters, with the goal of drawing mosto ("juice" released during fermentation) back into the cherries. The coffee was then dried on raised beds for 29 days. The resulting cup is surprisingly soft and gently fruited with nutty sweetness and botanical complexity.
